Lemon Choco Chip Muffin with a Surprise!

What's the surprise? Well I added some pear cubes in some of the muffin. Why? I... I don't know... I was curious I guess... And I didn't use the canned pears either I used fresh ones. LOL. Yea yea I'm an amateur, I don't even know what I'm doing half the time. But hey, if it comes out tasting pretty good, who cares right?? HAHAH.
So anyway today I made lemon muffins. I wanted to do something that didn't involve chocolate (so my NS friends can somewhat safely eat the muffins, they need to stay clear of foods that are too unhealthy) but I decided a wee bit of chocolate won't hurt. Right? RIGHT? So I added some mini chocolate chips. And I'm kinda glad I did coz I think without the chips the muffin would have tasted a wee bland despite the wonderfully lemony scent it gave off. It tasted subtly of lemon. Not enough zest. I SUCK at grating citrus... So anyway I also decided to add some pears to some of the muffins coz I just thought, what the hell. I havent tasted those yet. The muffins are cooling as I type. =) I tasted a bit. Poked a fork and scooped out some muffin and chomped. Well they -are- MY muffins I don't see why I can't or shouldn't. >.<
I think the muffins would go great with jam. =/ Oh well.
And the funniest thing was, the recipe stated in the book was good for 12. I thought 12 was too little (lol I have a lot of mouths to feed HAHA) so I doubled the recipe and I STILL ended up with 12 muffins! Ok maybe coz my muffin cups were prolly a tad bigger...But still... >.< That said I'm glad I doubled the recipe or I'd end up with 6... Which is DEFINITELY not enough... I have to bring 5 muffins out tomorrow. (For Jason Dreamer Alice Gavin and Moi =D)
Speaking of Jason, it's his bday tomorrow. Which explains the muffins. And I know he likes chocolate so I added some choco chips. And since I'm giving one to Dreamer I thought I should hold back the choco. Thus Lemon Choco Chip muffins. Ta-da!!
Whew now I gotta think about what to wear later for dinner with some mates and then tomorrow for Jason's bday. Clothes clothes. =D
